SEABLUE
Inspired by the bustling ports and marketplaces of the Mediterranean, the innovative restaurant’s two lively open kitchens prepare seafood over a wood-fired grill. The ocean theme is carried throughout the space with walls of stone and water. Seablue at the MGM Grand welcomes guests with a dramatic cylindrical fish tank and mirrored hallway, a theme re-emphasized throughout the dining room by artfully designed walls of stone and water. The majority of the dishes on the menu at Seablue are made on the grill, using a variety of oils and natural juices, and are finished in a tagine (a Moroccan clay oven), which extracts wonderful flavors from the fish without using conventional, less-healthy methods. A variety of grains and rices accompany the dishes. The fish is sourced and flown in from all over the world and grilled on a free-standing, wood-fired "island" grill, offering guests fresh, flavorful dining.
